I used to LOVE putting Parmesan on my pasta or salad. Until I found out I’m allergic to cow dairy, so now it’s an ingredient you won’t find in our kitchen anymore. I don’t mind choosing vegan options at all. You do need good replacements though otherwise, you’ll keep on craving the foods you’re skipping from your diet. But one thing I’ve learned over the past years is that you can find a great replacement for just about anything. This is definitely one of our favorites. If you feel the need to decrease your cow dairy intake (which is always a good idea, for you as well as for the animals), then read on for the best vegan Parmesan cheese recipe.

The ingredients are simple: nutritional yeast, almond meal and salt. The benefits of this homemade version are that the fats in this ‘cheese’ are in a better proportion than in cow cheese. And you can decide yourself on the amount and type of salt, which you can’t do with normal cheese. Besides that, this version contains fiber and easy absorbable proteins. Nutritional yeast looks a bit like fish food, but don’t let that scare you. It’s known for being a great source of B-vitamins, but also of folic acid and zinc.

RECIPE VEGAN PARMESAN CHEESE

Preparation: 5 min
Quantity: a large cup

INGREDIENTS

  • 1 cup organic almond meal
  • 3 tbsp nutritional yeast
  • 1/2 tsp mineral salt (for example Himalayan or Celtic sea salt)

INSTRUCTIONS VEGAN PARMESAN CHEESE

  1. Mix these ingredients together and save it in an airtight glass jar in the fridge. It’ll keep for months.
  2. Sprinkle on dishes that can use a delicious salty cheese-like touch.
